Federico Graziani is now a professional winemaker, but he started with digging in wine tasting winning the competition as best Italian sommelier in 1998, and working alongside Gualtiero Marchesi, Stefano Cavallini, Bruno Loubet, Carlo Cracco, and Aimo & Nadia Moroni. In 2006 his life changed. Today he has chosen to rely on the experience of Salvo Foti and Maurizio Pagano, heirs to a tradition founded in the 16th century with the Maestranza dei Vigneri, or Winegrowers Guild, the first association of this kind in the Etna area

Profumo di Vulcano comes from a small vineyard on the northern slope of Mt. Etna, 600 metres a.s.l., in the Passopisciaro district of Contrada Feudo di Mezzo, (Castiglione di Sicilia). The vines, averaging 100 years old represent the best of Etna’s native species. The wine undergoes to a spontaneous fermentation in open oak vats (no temperature control) with indigenous yeasts, Aged then in new and used tonneaux for 24 months, then 6 months of aging in bottle.
Ruby colour, deep and transparent. The aroma of raspberries and wild blueberries, citrus, Mediterranean scrub, orange, tangerine, marjoram and myrtle; then it opens to the sweet spices notes, sandalwood and pipe tobacco. Rich and deep to the taste, but never heavy, with slightly lively tannins. The closing is complex, with a salty-sweet feeling, that show personality and persistence.
